OMG my tip for the day is buy MANY pairs of measuring spoons because they can just disappear out of nowhere, and believe me, when you’re about to cook, you do not want to be searching an hour for a pair of measuring spoon!

Anyway, this is unfortunately what happened when I tried to make this. But good thing is, now that we went out to buy 3 more pairs, I hopefully won’t lose them again (unless I put them altogether at the same place and lose all 3 at once, then I would not be happy!)

But anyway, these truffles were thought of on the spot because I was like, OH DEAR, I have no equipment, I can’t do something that takes a long time, better come up with a blending dessert. I wanted to add dried apricots, but didn’t have any.

Perhaps next time, I can try that because I think it would give the desserts a new kind of flavour. It’s interesting that dates kind of have a neutral flavour, like you can use it and can’t really tell it’s a “date”.

Almond and Coconut Orange Coloured Truffles

1/2 cup almonds
1/4 cup flaked coconut
1/4 cup old fashioned oats
2 tablespoons canola oil
1 tablespoon goji berry powder/goji berries
1 teaspoon pure vanilla extract
6 pitted dates
1 tablespoon white sesame seeds
1 tablespoon chia seeds
1 teaspoon cacao nibs
1 teaspoon virgin coconut oil

Add the almonds, coconut, oats, canola oil, goji berry powder/goji berries, vanilla extract and dates in the blender. Blend for a little while until it becomes very crumbly and somewhat sticky.

Spoon it out into a bowl and add the white sesame seeds, chia seeds, cacao nibs and virgin coconut oil. Stir and allow it to mix together well.

Use your hands to shape them into balls.
