I AM SO EXCITED TO SHARE THIS because to me, this is the best tasting truffles I’ve ever made, and I am so excited. Sometimes, I make them and taste it, and find that it’s a little too dry or wet, or not sweet enough, but these are perfect to me! OMG, I don’t even know how I managed to pull it off!

I think it’s the amount of almonds, the fact that it was roasted, the time of blending (not overdoing it) and the moisture from the red grapes that really made the impact. I also love how the tiny parts of sesame seeds and shredded coconut gave it somehow of a white colour when you’re rolling it. It just looks super neat, haha!

This makes a total of 8 truffles, best to be eaten by TWO people (one person eating the entire batch may be a little much, I think)

But seriously, OMG I am just so excited, and I would totally eat another hundred of them if I could, like… Wouldn’t it be great if we can just eat until we explode, but not have any problems?

For the purpose of darkening these little ones, I used a tablespoon of dark cocoa. If you don’t mind what colour it is, you can use just cacao powder.

I just have to make like a comic of those balls having a convo about which will be eaten, with their faces going “ARGHGHGH NOOO!!” LOL!

Almond Dark Chocolate Truffles

1/2 cup roasted whole almonds
1/4 cup oat flour
1 tablespoon golden flaxseed meal
1 tablespoon extra virgin coconut oil
1 tablespoon dark cocoa powder (eg Hershey’s Special Dark)
1 tablespoon cacao powder
5 pitted dates
6 small red grapes
1 teaspoon pure vanilla extract
1 teaspoon white sesame seeds
1 teaspoon pure maple syrup
1 teaspoon vegan chocolate/carob chips (eg Enjoy Life, Sunspire)
1 teaspoon shredded coconut

Note: Because the ingredients are small, you will need a food tamper to press it down, otherwise it may not work and you will need to double the ingredients. I used Vitamix for this!

Combine the roasted whole almonds, oat flour (can be pre-ground from instant/old fashioned oats), golden flaxseed meal, coconut oil, dark cocoa powder, cacao powder, dates, fresh red grapes ad vanilla extract in the blender.

Blend a few times and press down with food tamper until it becomes a crumbly mixture.

Spoon everything out into a small bowl and add the white sesame seeds, maple syrup, vegan chocolate/carob chips and shredded coconut on top.

Mix it with a spoon until everything is evenly blended.

Use your hands and grab a small handful of mixture and press it into the shape of a ball.

    Oh my god, grapes in a truffle… freaking inspired!! I just wanted to say that I’m such a huge fan of your blog and your recipes, especially the ones that seem to get the least comments… anyways, thank you so much for doing what you do! Know that your recipes are not overlooked even though your audience is quiet. :3 Your photography is great and your food is always on point :)
