OMG these random energy bars with nuts, seeds and random things are so delicious, and filling. (Well, not really because I always want more afterwards!) So there’s this small punnet of blackberries in the fridge, and I was thinking of how to devour it. Eating it on its own just seem like I’m wasting the opportunity!

Did you know that I thought blackberries and mulberries were the same thing? All this time, I was WONDERING WHY blackberries just didn’t taste like mulberries and couldn’t work it out.

I bought a bag of carob chips yesterday from the Health food store, and really wanted to experiment with it. If you don’t have it and want to use chocolate chips, that will certainly work too. I wanted to use carob because I’ve had troubles sleeping in the past two nights and didn’t want anything that may keep me awake, and since chocolate has caffeine, I wasn’t going to take the risk until my sleep returned to normal.

You may not think it tastes too sweet in the beginning but once you add the raisins and carob chips, and eat the entire bar, you will find that it’s really sweet.

No Bake Blackberry Carob Energy Bar

1/2 cup instant oats
2 tablespoons pecans
2 tablespoons walnuts
1 tablespoon sunflower seeds
1 tablespoon maca
1 tablespoon chia seeds
1 tablespoon almond milk
1 pitted date
5 blackberries
1 teaspoon vegan carob chips
1 tablespoon raisins
1 tablespoon instant quick oats
1 tablespoon sunflower seeds

Add the 1/2 cup instant oats (not the tablespoon), pecans, walnuts, 1 tablespoon sunflower seeds (for now), maca, chia seeds, almond milk, date and blackberries in the blender.

Pulse until it’s sticky but not completely blended. Spoon the mixture out into a bowl and add the carob chips, raisins, oats and final tablespoon of sunflower seeds. Knead with your hand and form a dough, then press it down and shape it into a rectangle. Cut off the edges and cut into desired pieces.

  • 1 tablespoon chia seeds
  • 1 tablespoon almond milk
  • 1 pitted date
  • 5 blackberries

  • 1 tablespoon raisins
  • 1 tablespoon instant quick oats
  • 1 tablespoon sunflower seeds

Instructions
  1. Add the ½ cup instant oats (not the tablespoon), pecans, walnuts, 1 tablespoon sunflower seeds (for now), maca, chia seeds, almond milk, date and blackberries in the blender.
