OMG, this is a wonderfully healthy breakfast oatmeal that’s really healthy and AWESOME!

I made this some months ago after discovering the awesomeness of chia seeds. Though I have to say, the steel cut oatmeal took a lot longer than I expected to cook, which was almost about an hour, despite the package saying it is instant.

Something I noticed was that the oatmeal kind of dried out a bit towards the end, so you need to keep an eye out for it. If it does dry out, be sure that you add a bit more water and stir it around.

Blueberries, Chia Seed and Oatmeal Superfood Breakfast

Oatmeal
1 1/2 cup instant steel cut oats
1/4 cup chia seeds
1 tablespoon ground flaxseed
1/2 teaspoon ground cinnamon
2 cups unsweetened vanilla almond milk
1/2 cup water
1 1/2 cup pure apple/grape juice
1 banana, mashed
1/2 cup blueberries

Topping
1 tablespoon extra light olive oil
1 cup blueberries
1/2 teaspoon ground cinnamon
2 teaspoons corn starch
1 tablespoon water

Preheat oven to 400°F (204°C).

Mix the steel cut oats with chia seeds, ground flaxseeds, cinnamon, then combine it with the vanilla almond milk, water, apple/grape juice.

Use a fork/spoon to mash a banana in a separate bowl, then add it to the mixture. Finally, add 1/2 cup of washed blueberries and stir well. Move this mixture into an oven baking dish and bake in the oven for about 50 minutes to an hour, until the oatmeal is no longer hard.

After 30 minutes, open the oven and take the oatmeal out and give it a stir. If it’s too dry, add a bit more water.

To make the Topping: Wash another cup of blueberries.

Add a tablespoon of extra light olive oil into the frying pan, then add the blueberries and 1/2 teaspoon of cinnamon.

Mix corn starch with water and set aside. When blueberries have been cooking for about 10-15 minutes, they should start to soften and juice will leak out.

Once this happens, use your spoon to mash the blueberries as fine as you can get it. Pour the corn starch with water and mix for about 3 minutes, and turn the heat off.

Spoon the blueberry topping into a bowl and cover it with aluminum foil.

Finally, take the oatmeal out of the oven and drizzle the blueberry topping.
