OMFG Cafe Gratitude is like a place I would want down my street so I can go there every day to soak up its health and deliciousness. I absolutely loved going there, though it was a bit hard to get to without a car, so I could only visit once.
But seriously, that place made me love vegan food even more, even SPROUTS, something I have always hated.
One of the things I really love is their sauces, so I went on the internet searching for recipes they may have, and I found this one on their recipe site. Needless to say, I was ecstatic and nearly died of JOY!

Please note that the original recipe calls for 1 cup of sunflower seeds and 1/2 cup extra virgin olive oil, but I decreased it in my version.
Cafe Gratitude’s Zucchini Cilantro Hummus
1 cup zucchini
1/3 cup sunflower seeds
2 tablespoons tahini
1 tablespoon and 1 teaspoon lemon juice
1/2 teaspoon ground cumin
1/8 teaspoon cayenne pepper
1/2 teaspoon sea salt
1/2 teaspoon black pepper
1/4 cup extra virgin olive oil
Chop the zucchini roughly and add it to the blender, along with the sunflower seeds, tahini, lemon juice, cumin, cayenne pepper, salt, black pepper and cilantro into the blender. Blend on high speed until it’s completely smooth.
Add the extra virgin olive oil and blend again to allow it to thicken.
