Cashew Chia Seed Bars with Chocolate Topping

I have no idea why I hadn’t thought of this sooner because the taste of this is AMAZING. It all started when I woke up with a crummy sleep and I usually don’t work very well when I’m tired, so as a zombie, I put random things in the blender.

(Kind of like when people sleep walk and just start cooking in the kitchen…)

Anyway, what came out of it was NOT very pleasant, so I threw it out and started a new batch. This time, it was perfect! I can’t believe I hadn’t tried sooner!

I really love how the virgin coconut oil just hardens the bars when you freeze them, and then suddenly they turn white. When I put it in, the colour was much darker. I think I tried making something like this last time but it wasn’t as I hoped cos I blended everything

Seriously, the chocolate chips on top should really be called the CHERRY on top, it made the bars so perfect, sorry I didn’t take a photo of it in progress cos I kind of forgot as I was so hungry to eat them. I used Enjoy Life mini chocolate chips. The dark choc chips work great too!

Cashew Chia Seed Bars with Chocolate Topping

1/3 cup oat flour
1/3 cup cashews, some crushed
2 tablespoons virgin coconut oil
2 tablespoons chia seeds
2 tablespoons blanched almond meal
1 tablespoon better than milk rice powder
1 tablespoon finely shredded coconut
1 tablespoon pure maple syrup
1 teaspoon cacao nibs
1/4 teaspoon ground vanilla powder

Topping
1 tablespoon vegan dark/mini chocolate chips (eg Enjoy Life)

Combine everything but the topping ingredient into a large bowl and stir until it’s mixed very well. You may want to crush some of the cashews beforehand.

Spoon the mixture onto a mini bread pan aligned with a thin piece of parchment paper. Press it down with a spoon until it’s very even and flat on the top.

Put the vegan chocolate chips in a tiny bowl and heat in the microwave for a minute, then use a spoon to nudge it until it completely melts. Drizzle the chocolate mixture on top of the bars in whatever shape or form you want, then put it in the freezer for about 15-20 minutes to harden, then cut into bars.

Note: You can also use extra virgin coconut oil for this if you wish, but try not to use refined coconut oil as there are less flavours, or other oils in replacement. Coconut oil hardens easily and is the key to turning these bars white and hard.
