Right now, I’m having a lot of fun combining different ingredients and experimenting what comes out of it. Kind of like a scientist in a big lab, testing things and seeing the results. It’s really fun and best part is: EATING THE EXPERIMENT!

My partner keeps begging me to cook the foods I’ve made again and I keep saying, “once I make enough on the site to give me a holiday/weekend, then you can choose what you want on the site like a menu and I shall make it!

Cashew Chia Seed Chocolate Bars

1/2 cup cashews
1/4 cup old fashioned oats
2 tablespoon chia seeds
2 tablespoons hemp hearts
1 tablespoon cacao nibs
1 tablespoon finely shredded coconut
2 tablespoons canola oil
1 teaspoon pure vanilla extract
5 pitted dates
1/4 teaspoon ground vanilla powder
1 teaspoon dark cocoa powder
1 tablespoon cashews (some crushed)
1/2 teaspoon chia seeds
1/4 teaspoon cacao nibs

Topping
1 tablespoon virgin coconut oil
1 teaspoon cacao powder/dark cocoa powder
1 teaspoon pure maple syrup

In the blender, add the 1/2 cup cashews, old fashioned oats, the 2 tablespoons chia seeds, hemp hearts, tablespoon of cacao nibs, shredded coconut, canola oil, vanilla extract, dates and ground vanilla powder. Blend on high speed (I used Vitamix with food tamper) until it’s crumbly and becomes somewhat sticky.

Spoon it out and add the whole cashews (break a couple up), chia seeds, cacao nibs and give it a very good stir, finally add the teaspoon of dark cocoa powder and give it a quick stir.

Spoon the mixture into a mini bread pan with a thin parchment paper on the bottom.

Topping: Combine the coconut oil, cacao/cocoa powder and maple syrup in a bowl and stir until it’s mixed evenly. Drizzle over the bar and be sure it reaches all parts.

Put it in the freezer for about 15 minutes to allow the top to harden, then cut it up and serve.
