This is one of the easiest things you can ever make!
I first started making noodles like this when I saw various Ancient Chinese/Wuxia Series have characters just eating noodles like this. Every time I see them eat those noodles, my mouth starts to water. So, I created my own recipe for it, so whenever I watch these scenes, I can easily make it myself and eat it as well.

It’s been a while since I cooked with rice noodles. I actually was browsing Pinterest and saw this amazing looking rice noodle recipe, so I got inspired to hunt for a bunch of vegetables and make a rice noodle dish. Funny that I used pad Thai noodles, but it’s still rice noodles. It can be a little confusing!
I was going to make this sort of raw but then, I don’t know, I just felt like eating these veggies cooked. I sauteed them in lower heat, and added the extra virgin olive oil at the very end to preserve all the nutrients, so I think that’s a great thing. Actually, the reason why I didn’t want to eat this raw is because raw carrots always give me some kind of discomfort in my stomach for some hours, perhaps intestinal blockage? I’m not sure. Arrabiata sauce is one of my favourite things ever when it comes to pasta, and at one stage, I panicked because I couldn’t find Rao’s Arrabiata sauce in Australia. I was thinking: OH NO! How am I gonna live? All the other sauces just don’t taste as good. I was determined to make a version that somewhat taste like it.
Although I don’t think this tastes exactly like Rao’s Arrabiata sauce, it’s good enough! I do think the difference lies with the tomatoes, and for Rao’s sauces, he uses these ultra high quality Italy imported tomatoes that I think must make a big difference. Anyway, this is really sweet without any added sugar! I also love that the extra virgin olive oil was able to be simmered in very low heat so that it doesn’t turn ugly. Continue reading
OMG, vegan Alfredo sauce. It’s funny I made this and I had never even tasted real Alfredo sauce before so I don’t even know what I’m comparing it to.
I made this a while back but I didn’t really get a chance to cook pasta with it, or when I did, it turned out all brown because of the whole wheat pasta, so this time, I made it with brown rice pasta (bought it from Trader Joe’s). OMG, it’s funny how much brown rice pasta taste like the real pasta. I don’t even taste any difference. Continue reading

This is really easy to make, if you have the right ingredients. Remember not to overcook the noodles, otherwise you will end up with it sticking too much everywhere, and that’s super hard to handle. Continue reading
