I was on the treadmill this morning, scrounging for videos to watch on my ipad, as I always love watching short videos. I usually love to watch Raocow and Bubzbeauty’s vlogs. One of the videos I came across was Bubz cooks for Tim’s birthday, and she made a pasta bake, and none other than a creamy mushroom soup!
It’s funny that ever since I got my Vitamix blender, I have forgotten to make soups. I keep making smoothies but the soups tend to get a little neglected. Plus, I have never tasted a creamy mushroom soup, so I had to try it. All I remember seeing was that she sauteed onions, garlic and mushrooms. Well, I could work with that!
It was lucky that I also got a pretty big packet of mushrooms in the fridge that I hadn’t thought of how I was going to use, so this was so perfect. And I spent so long thinking about what to cook too! Continue reading
Wow, this food is nostalgic to the max. Lotus soup was something my grandparents always gave me when I was ill. It’s kind of like porridge, but it’s sweet – and is the perfect food to eat when you’re not feeling well, and you want your stomach to rest.
I just remember always loving this soup, though I’m not sure what people would think if they’ve never had it. It is very gooey and feels almost like something you would play with, rather than what you’d eat, but as for me, I simply love it! The important thing about cooking lotus soup is to keep stirring, because if you don’t, there will be a lot of lumps. Also, you can’t put too much lotus root powder, otherwise it will be rubbery goo that’s almost inedible. Continue reading
I have missed this soup! This is one of those soups that I used to not like as much because there were too much potatoes, and now I miss it like crazy because I haven’t had it for ages. My family used to make this with actual meatballs, but I decided to make a vegan version.
The challenge was to make my own meat substitute, because I like to rely on my own when it comes to cooking, and if I can avoid a pre-packaged item, I will, mainly because those can’t even be bought all over the world and I would feel bad for anyone viewing in another country who doesn’t have access to that particular type, so I think everything is much more fun when you can start from scratch. Mmm, it’s getting to autumn, and I can’t help but think of falling autumn leaves when I see that ORANGE tomato soup, even though I have no idea why it’s orange. Funny that as soon as you blend tomatoes, it becomes orange.
But anyway, this warming soup is brilliant for cold days, and the chunky tomato soup actually goes very well with rice. Not the blended version though (don’t try).

I actually saw a picture of a sweet potato and corn chowder somewhere, and not knowing exactly how it was made, it has inspired me to try my own. Seriously, those two goes SO WELL together, because it creates such a thick, sweet soup that’s just amazing to drink! Continue reading
