I’ve been meaning to make this for a few days, only today was my teeth slightly better from the braces adjustment I just went to, which made me stick to a mush diet, haha!

OMG these are like, MAGIC! They just change before my very eyes.

I always saw the cookie recipes where the cookie just flattens in the oven and was wondering how the heck that was done, and I was shocked that these did that. I guess it’s the amount of liquid and baking powder? Hmm, it’s still a bit of a mystery.

So these cookies can be chewy OR crunchy. When I baked them for 10 minutes, they were super soft but it didn’t take long before it became crunchy, so eat them fast while you’re at it, or wrap them in foil and store them in a container with the lid closed so no air escapes.

Chewy Chocolate Chip Oatmeal Cookies

1/2 cup oat bran
1/4 cup brown rice flour
1/4 cup oat flour
1/4 cup brown rice syrup
3 tablespoons extra light olive oil
1 tablespoon & 1 teaspoon vegan chocolate/carob chips
1 tablespoons golden flaxseed meal
1 tablespoon lucuma
1 teaspoon pure vanilla extract
1/2 teaspoon baking powder

Preheat oven to 350°F (176°C).

Add all the ingredients in a large bowl and stir until it’s very well mixed.

Spray some nonstick cooking oil on an oven tray and roll the dough into cookie-like flat circles. Put them on the tray and leave plenty of space between each (they will expand a lot).

Bake for about 10 minutes and allow the cookies to cool. If you want them crunchy, bake for slightly longer and let it cool completely before eating.
