Yes, I’ve made quite a few versions of this in the past but I am always on the lookout for a better way of making the same thing, or making it taste different in some ways, and this turned out really awesome! I guess I learn by tasting cookie dough I was going to bake, as those turn out super awesome.

There’s a few things you can substitute. For example, you can use all pure maple syrup rather than molasses and coconut sugar. You can also omit the ground vanilla powder and use a vanilla bean, or nothing if you don’t have either.

I just ate the dough straight out of the bowl. You can make it into a bar if you like, but seriously, why bother to do that when you can just dig in, right? Haha, this is just me being impatient and wanting to eat all the delicious goodies as soon as I can!

Chilled Chocolate Chip Cookie Dough

3/4 cup & 2 tablespoons oat flour (extra finely ground)
1/4 cup blanched almond meal
2 tablespoons finely shredded coconut
2 tablespoons vegan chocolate chips (eg Enjoy Life)
2 tablespoons unsweetened applesauce
1 tablespoon unsweetened almond milk
1 tablespoon pure maple syrup
1 tablespoon pure vanilla extract
1 tablespoon extra light olive oil/canola oil
1 tablespoon virgin coconut oil
1 teaspoon cacao nibs
1 teaspoon coconut sugar
1 teaspoon molasses
1/2 teaspoon ground vanilla powder
1 teaspoon pure maple syrup (separate from the other)

Be sure that the oat flour you’re using is extra finely ground, if you are blending it yourself.

Add all the ingredients in a large bowl except the teaspoon of pure maple syrup and stir until it’s evenly mixed. Chill it in the freezer for 15-20 minutes until it hardens a little.

Finally, add the teaspoon of maple syrup and stir a little, and serve.
