Chocolate Breakfast Oatmeal and Chia Seed with Strawberry Sauce

I was planning on making some oatmeal with strawberry sauce together but seriously, how could you make strawberry stuff without chocolate, right? But since I have made chocolate oatmeal in the past, I thought I’d change the recipe a little bit.

This time, I added some chia seeds and flaxseeds, to increase the awesome nutrition in the oatmeal.

I am just starting to realise how awesome it is to add applesauce in the oatmeal. It makes it sweet, and it works just as great as sugar!

OMG today is also the first time I used my new napkin thingo, I forgot if that’s what it’s called, but it just fits so well with that ice cream bowl I got a while ago. I always love finding matching sets of bowls and wood or materials that make photos look pretty!

Let me warn you that this stuff is FILLING and you may even have left overs if you share it between another person, because I could only eat about 3/4 of it. Oh, and be sure you use sweet strawberries, and make sure they are ripe. Otherwise, they may become sour.

Chocolate Breakfast Oatmeal and Chia Seed with Strawberry Sauce

Oatmeal
1 1/2 cup old fashioned oats
1 1/2 cup unsweetened almond milk
1 1/4 cup concord/white grape juice
1/2 cup unsweetened applesauce
2 tablespoons chia seeds
2 tablespoons dark cocoa powder
1 tablespoon cacao nibs
1 tablespoon flaxseed
1 tablespoon finely shredded coconut
1/4 cup water

Strawberry Sauce
1 1/2 cup chopped sweet strawberries
1 tablespoon virgin coconut oil
1 tablespoon pure maple syrup
1 teaspoon corn/tapioca starch or arrowroot
1 teaspoon pure vanilla extract

Topping
1-2 teaspoons vegan chocolate chips (eg Enjoy Life)
1 teaspoon cacao nibs

Oatmeal: Combine all the ingredients in a medium saucepan and turn the heat to medium high (about 5, or between 4-5)

Cover the lid and cook the oatmeal for about 10 minutes, then stir it around and add the 1/4 cup of water.

Cover the lid again and keep cooking for another 10 minutes, but this time, stirring a lot more. The oatmeal should be nice and soft to eat after 20 minutes.

Strawberry Sauce: Be sure to make this while the oatmeal is cooking.

Dice up the strawberry into 2-5 pieces (depending on the size of the strawberries) and measure out a cup and a half. Put it in the saucepan and turn the heat to medium high (4-5). Cook the strawberries for 5 minutes, meanwhile combine the coconut oil, maple syrup, starch/arrowroot and vanilla extract in a tiny bowl and mix until it’s even.

Drizzle it into the strawberries after 5 minutes, and stir and cook for another 5 minutes. If you find that the mixture is a little dry, add a tablespoon or so of water.

Combine: Spoon the oatmeal in a bowl, then drizzle the sauce over. Add a teaspoon or so of vegan chocolate chips and cacao nibs if desired and serve.
