Chocolate Breakfast Oatmeal

I was wondering why don’t I ever tried to combine chocolate and oatmeal?
I always go with a simple boring oatmeal breakfast recipe or put the oatmeal on my smoothie. Until I made this chocolate breakfast oatmeal.

I can’t believe it, but using brown rice flour in water like this one makes a great breakfast recipe. Do you know how I came up with the idea? I was thinking to make it as creamy like porridge, and then my mind when to rice which is based ingredient of it, and finally came up with rice flour.

I used a tablespoon of dark cocoa powder from Hersey because I noticed that it makes the color a lot darker. I’m curious though, how do they make the dark cocoa powder darker?

Just in case anyone asks, the white grape juice sweetness the oatmeal a lot, so no, please don’t add water instead. Though, you can totally experiment with other juices, though please use 100% pure juice if you can, don’t use the ones that have added stuff like sugar or additives.

Chocolate Breakfast Oatmeal
Serves: 2
Ingredients
  • ¾ cup white grape juice
  • ¾ cup unsweetened almond milk
  • ¾ cup instant old fashioned oats
  • ¼ cup brown rice flour
  • 1 tablespoon hazelnut oil
  • ⅛ teaspoon Himalayan/sea salt
  • 1 tablespoon & 1 teaspoon brown rice syrup
  • 1 tablespoon cacao powder
  • 1 tablespoon dark cocoa powder
  • 1 teaspoon pure vanilla extract
Topping
  • 1 teaspoon coconut/almond milk
  • 1 teaspoon vegan chocolate/carob chips (eg Sunspire, Enjoy Life)
  • A sprinkle cacao nibs
  • A sprinkle cacao powder
  • A sprinkle of shredded coconut
Instructions
  1. In a small saucepan, combine the white grape juice (please do not sub with water), almond milk, oats, brown rice flour, hazelnut oil and salt. Stir until it’s evenly mixed.
  2. Turn the heat to medium/medium high (4-5) and simmer for about 8 minutes, stirring all the time, especially at the end.
  3. Once the oats are nice and thick, which should be after 8 minutes, turn the heat off. Add the brown rice syrup, cacao powder, dark cocoa powder and vanilla extract. Stir until everything is even.
  4. Spoon the oatmeal into a bowl and add topping of choice.
  5. I added a teaspoon of coconut milk, some vegan chocolate chips, cacao nibs, cacao powder and a bit of shredded coconut. You can add other topping of choice if you want.
