Wait, should they be brownies or blondies?!

I’m still experimenting with the magical oat bran and making all kinds of desserts with it! One day, I’m going to come up with a MOUNNNNTAINfull of recipes all revolving around them. But also because of this, I’ve started this thing with eating brownies for breakfast, hahaha. Well, it’s OATMEAL! Oatmeal is a breakfast food, right? =P

So far, I’ve made brownies that are chocolate flavoured, but I wanted to make one that’s got a bit of chocolate here and there on the side, but not to overtake it…

So I came up with these, chocolate chop brownies.

OMG I swear these are just so filling and delicious, that I could have them each day. I actually discovered that the shorter you bake it, the sweeter they are, as the sugar evaporates with the liquid, it seems. I love discovering all these fascinating knowledge about baking!

Chocolate Chip Oat Bran Brownies

1/4 cup walnuts, crumbled and pre-roasted
1/2 cup oat bran
1/4 cup brown rice syrup
3 tablespoons brown rice flour
2 tablespoons rice bran
2 tablespoons arrowroot
2 tablespoons extra light olive oil
1 tablespoon golden flaxseed meal
1 tablespoon vegan chocolate/carob chips (eg Enjoy Life, Sunspire)
1 tablespoon white grape juice
2 teaspoons pure vanilla extract
1/2 teaspoon baking powder
1 teaspoon cacao powder (topping)

Preheat oven to 350°F (176°C).

If the walnuts are not roasted, then crush them briefly and put them in a pan. Allow the oven to heat up for about 5 minutes, then roast them in the oven for 7-9 minutes until you can smell a fragrance.

Combine all the ingredients in a large bowl, except the cacao powder. Once the walnuts are done roasting, add them in. Stir until everything is very evenly mixed.

Spray some non-stick cooking oil on a small oven tray (I used a bread pan).

Scoop the mixture in the pan and spread it even. Be sure the layer is not too thick. Mine filled up about 95% of the pan. Finally, sprinkle the cacao powder on the top.

Bake in the oven for about 15 minutes.
