OMG if you ever want to crack open a real coconut, use a hammer and bash on it until the skin breaks, but don’t assume that’s the hardest part.

You literally have to use a knife to cut the flesh out, it is that hard! I bought this coconut a while ago and decided to see if I could get anything out of it, and OMG it was like a SPORT, haha!!

But nevertheless, I ended up scooping about 1/2 cup of meat and left it out for a couple of days so it was a little dry. You may want to do that, otherwise perhaps add one more tablespoon oats if you find the mixture is too wet.

These truffles are just so amazing, they have a strong coffee and chocolate flavour, and is really rich. I totally recommend you to use the real coconut if you can!

If you don’t want to use meat from a real coconut, you can add perhaps 1/3 cup shredded coconut or flaked coconut with 1 tablespoon more coconut oil.

Chocolate Coffee Truffles

1/2 cup cashews
1/2 cup almonds
1/2 cup coconut meat (scooped from a regular coconut)
2 tablespoons pure maple syrup/agave
2 tablespoons instant oats
1 tablespoon virgin coconut oil
1 tablespoon cacao powder
1 teaspoon coffee extract
1 teaspoon pure vanilla extract

Combine all the ingredients in a blender and blend until it becomes crumbly, then sticky.

The pieces should be pretty small, but with a few that’s chunkier and larger. This will give a little crunch when you’re biting down. Spoon the mixture out into a bowl afterwards.

Use your hands to shape the mixture into balls, and eat away immediately or coat with cacao or chocolate shavings.
