Okay, I swear it wasn’t intended to come out this way, or I should say, I was just adding a bit of this, and a bit of that, and for some reason, it all came together like this!

I think I was planning to make some kind of gingerbread recipe today, but oh man, chocolate…

Every time chocolate comes along, it kind of just likes to kick everything out of the way cos chocolate is addictive to me.

I have to say, raw buckwheat does have an interesting taste, it may not be for everyone, so I have a second option to add oat flour instead, as I think oat flour (ground up oats) have a very neutral taste.

And finally,well, the goji berries I just thew in there because that livened it up a lot, haha!

It’s funny, I think I ate a lot of the dough before I could even cut it up because it’s just way too tempting. Do you guys do that too? Like when I take photos, I can’t help but sneak a piece or three to eat… Then OOPS, there’s not enough to photograph!

Chocolate Goji Berry Fudgey Brownie Bars

1/2 cup buckwheat or oat flour
1/4 cup blanched almond meal/flour
2 tablespoons golden flaxseed meal
2 tablespoons walnut oil
1 tablespoon finely shredded coconut
1 tablespoon pure maple syrup
2 teaspoons pure vanilla extract
2 tablespoons white grape juice
2 tablespoons cacao powder
1 tablespoon goji berries

Topping
1 tablespoon extra virgin coconut oil
1 teaspoon cacao powder
1/2 teaspoon pure maple syrup

Combine all the ingredients for the brownie bars in a large bowl, including the buckwheat/oat flour, almond meal, flaxseed meal, walnut oil (you can substitute with other oil if you wish), coconut, maple syrup, vanilla, grape juice, cacao powder and goji berries.

Stir until everything is nice and thick, then knead with your hands until it’s a big lump of dough.

Shape it into a rectangle, cut the corners off and chop it into bars.

Make the Topping: Combine the coconut oil (should be white coloured, not melted, but not frozen solid either) with maple syrup and cacao powder and stir until it’s even and well combined.

Spread the topping over the bars.
