Chocolate Rosemary and Strawberry Brownies

I was thinking, how else can I make these brownies taste unique? I tried so many different ways to combine ingredients I was beginning to wonder if I had done them all. Then, something came to me. Strawberries and rosemary! How did I not think of that? Why? Because I happened to have a lot of those in the fridge, and barely anything else.

I can’t believe just how powerful rosemary makes the brownie taste. It’s just so herby and DELICIOUS!

Strawberries make an excellent natural sweetener. Though the tablespoon of date paste would’ve made a nice sweetener, I think the strawberries really topped it off. It also made the mixture wetter, which was nice because sometimes I’ve blended things together and they come out all separate crumbs and it takes forever to even form them into any shape.

Great news is, the strawberries don’t actually change the flavour of the chocolate, which is what makes fruits like this a great sweetener!

Of course, this is one of those brownies that you can only make if you have a powerful blender like Vitamix.

Chocolate Rosemary and Strawberry Brownies

1/2 cup old fashioned oven toasted oats
1/4 cup raw cashews
1 tablespoon shredded coconut
1 tablespoon chia seeds
1 tablespoon sliced almonds
1 tablespoon almond butter
1/2 small sprig rosemary
1 tablespoon date paste (grind dates until they form a paste)
2 strawberries
2 tablespoons cacao/carob powder

This one is very easy. Just throw all the ingredients into the blender (I recommend Vitamix), then blend until it’s nice and smooth. Spoon it out on some baking parchment paper so it doesn’t stick to the bottom and use your hands to flip it back and forward to shape it into a rectangle/square. Once it’s got the shape, simply use a knife to cut off the rounded edges and serve.
