OMG, here are some chocolate walnut brownies with a fragrance!

I’ve always been crazy with brownies, and these are really easy to make and has heaps of awesome nutrients from the rice bran and oat bran.

It’s funny I never even knew oat bran was a thing until I read some recipes including it in muffins and cookies, so I went and got some. It reminds me of steel cut oats, haha.

My next experiment will be making brownies/cookies with oat bran as a main ingredient!

Also, if you want to replace the brown rice syrup with another liquid sweetener like pure maple syrup, I advise you to add a little less than 1/4 cup as brown rice syrup is a little less sweeter than some others.

Chocolate Walnut Brownies

1/2 cup walnuts, pre-roasted
1/2 cup brown rice flour
1/2 cup rice bran
1/4 cup white grape juice
2 tablespoons cacao/carob powder
1 1/2 teaspoon baking powder
2 tablespoons oat bran
2 tablespoon canola oil
1 teaspoon pure vanilla extract

Preheat oven to 350°F (176°C).

Measure 1/2 cup of walnuts and put it in an oven tray. Bake in the oven for about 8-10 minutes until there’s a fragrance and the walnuts have browned a little. (Don’t accidentally turn off the oven after this like I did!)

Combine the rest of the ingredients in a large bowl, and when the walnuts are done, toss it in as well. Stir until everything is evenly mixed.

Spray some non-stick cooking oil on a baking tray (I used a bread pan) and spoon the batter into it. Be sure your brownie layer is relatively thin so it won’t take too long to bake, but don’t make it *too* thin! Even it out with a spoon on top to flatten the surface.

Bake in the oven for about 22=25 minutes and cut into squares.
