I bought a large container of pea protein powder and I just had to try and find ways of using it.

I’m always fascinated with things like this, because I didn’t even think that peas could contain protein. I wonder how many peas it took to make that giant container of powder.

You can use any protein powder you want, I recommend a pure one without any added sugar, but if you are using one, be sure to decrease the amount of maple syrup so the truffles aren’t overly sweet. I have to admit, vanilla flavoured protein powder usually has a really awesome, wonderful taste.

I actually think these would make a really cute gift for Christmas, like you can bring them to family and let them have a taste of healthy truffles! Just don’t forget to gift wrap them!

Note: You will need pre-ground up oats and cashew/almonds. Also, if protein powder already contain sweeteners, decrease the amount of pure maple syrup and replace with a nut milk.

Coconut Coated Chocolate Protein Truffles

1/4 cup protein powder (I used Swanson 100% pure pea protein)
1/4 tablespoons cashew/almond meal
2 tablespoons finely shredded coconut (divided*)
2 tablespoons oat flour
2 tablespoons ground flaxseed meal
2 tablespoons cacao powder
1 tablespoon & 1 teaspoon pure maple syrup
1 tablespoon extra virgin coconut oil
1 tablespoon walnut oil
1 teaspoon pure vanilla extract

Add all the ingredients into a large bowl except for the second tablespoon of shredded coconut.

Mix it with a spoon first, then Use your hands to to knead the dough until it sticks together.

Then, grab a small piece and shape it into a ball, then dip it in the second tablespoon of shredded coconut so that the truffle is coated with coconut. Repeat until all the dough is used up.
