Crashed potatoes are one of life’s greatest and most amazing discoveries ever. I actually saw a picture of it on Pioneer Woman, though I think it was a Pinterest photo. I had to try it and I swear these are so simple, easy and DELICIOUS!

I think what I love most about this is the skin. It’s crunchy and I say it’s the best part!

I also love how the edges are really hard, and the herbs just really enhance the flavour of the potato.

I find this to be the perfect snack when I’m hungry but don’t want to eat a lot. Sometimes when I am hungry at night, I either have fruits, leftovers or rice. The problem with fruits is that it’s so unfilling, and leftovers often never exist and rice is hard because I like something to go with it. These are so perfect because they’re filling, small, easy to make and best of all, you just need the spices and herbs on it, and you won’t need to cook anything more.

If you don’t have a masher or thing to crush it, you can always just cut it and open it up. It really doesn’t matter how you break the potato, as long as you do – otherwise there will be no crunchy parts.

Crashed Hot Potatoes with Crusty Skin

3-4 red potatoes
1 tablespoon extra light olive oil
1 teaspoon Italian herbs
1/2 teaspoon garlic powder
A few sprinkles Himalayan/sea salt
A few sprinkles Black pepper

Other possible spices: Onion powder, thyme.

Wash the potatoes, do not peel! Put the potatoes in a medium saucepan and fill it with enough water to cover the top of the potatoes. Bring the pot of potatoes to boil, then continue cooking on high heat for about 45-50 minutes. Try poking something sharp through the potatoes, if it’s soft, then it’s ready.

Preheat oven to 400°F (204°C).

Drain the water and put them on an oven tray and use a potato masher or something flat to crush the potatoes. Sprinkle the olive oil, Italian herbs, garlic powder, salt, pepper and other herbs of your choice (optional) on the potatoes.

Bake in the oven for about 30-35 minutes or longer until you can see crispiness on the skin.

Ingredients
  • 3-4 red potatoes
