OMG I’ve wanted to make green noodles forever, since I saw a picture of some lovely  noodles in green a while ago. They look super healthy and there’s just something really appealing about the way it looks, and I’m so glad I tried it, because they turned out SO DELICIOUS!

These noodles are super fast and easy to make, and only takes about 10 minutes to cook! Brilliant if you are in a hurry. Plus, all the creamy sauce really does fill you up!

I bought a bag of spring salad mix with lots of cute baby lettuces, baby spinach, arugula and radicchio, even though I’ve not even heard of the last one, I am so in LOVE with this mix! You can get any salad green mix, or even buy them separately and put them together. You can also try putting some kale in too. I was going to but I had too much lovely greens I didn’t even have room for more.

I think when you make a sauce with so much flavours, you completely forget there are greens in there. If you know people who hate the taste of broccoli/broccolini, try making it this way, because I really think the sauce covers up all the taste!

I love using miso paste but if you don’t want to use that or have trouble finding it, you can replace with about 2-3 teaspoons low sodium soy sauce. Or, you can add a little more salt.

If you want a little whiff of fragrance, garnish this with a bit of sesame seeds. See my memory loves to play tricks on me because I was all set to do it, then I forgot at the last minute. OOPS!!!!

Creamy Green Soba Noodles with Spring Mix

Sauce
3/4 cup coconut milk (I used regular version)
1 1/4 cup water
2 sprigs parsley
1/3 cup chopped yellow onion
1/4 cup frozen peas, rinsed and drained
2 cloves garlic
1 tablespoons extra virgin olive oil
1 tablespoon white cooking wine
1 tablespoon lime juice
1 teaspoon sesame oil
1 teaspoon miso paste
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon pure maple syrup
1/4 teaspoon ginger powder
A few sprinkles ground pepper
A few sprinkles Himalayan/sea salt
A pinch of red pepper flakes

Other Ingredients
1 bundle soba noodles
5 broccolini spears (can substitute with 1 cup broccoli)
2 mushrooms
2 cups spring mix (baby lettuces, baby spinach, arugula/rocket, radicchio)
5-7 fresh basil leaves

Be sure to rinse and drain the frozen peas. Add all the sauce ingredients in the blender and blend until it’s completely smooth (like a thick, whitish green liquid).

Meanwhile, use a mushroom slicer to chop the mushrooms (or use a knife), and chop the broccolini (or broccoli) into small pieces and put it in the saucepan with the dried soba noodles and mushrooms.

Once the sauce is completely smooth, pour it on top of the noodles and vegetables.

Boil on high heat for about 10 minutes, continuously stirring until the noodles are soft.

Take the saucepan off the stove and add the spring mix greens and basil. Stir until everything is evenly mixed and serve.

    Just made this tonight and it’s delish! I didn’t have all the ingredients on hand so it was slightly different (and a bit more green) but very tasty. Will definitely be making this again!
