I’ve been on a sweet bread making high lately. I’ve done a carrot cake/bread, lemon chia seed bread, and now, it’s a chocolate chip bread. Ever since I created the carrot cake, I’ve been crazy cos it’s like I made a new “base” recipe that works! Usually I have some problems with breads/cakes…

Because whenever I make them, they always seem to get undercooked. Lately, these ones are just turning out perfect that I’m having a hard time believing that this is all real, so I wanted to use the same basic recipe to make different flavours. I wonder what’s next! Hahaha.

Let me say that this bread is seriously awesome, it’s so rich and the chocolate chips just makes it perfect. Perhaps you may not be used to a bread that’s not as sweet as what you’re used to, but it still is sweet, just the right amount for me, and it’s best to have it in this level rather than more, for health!

If you don’t want to add the white grape juice, simply replace with an extra tablespoon of unsweetened applesauce. It will work regardless which you use.

This makes a small loaf, ideal for two people!

Double Chocolate Chip Bread

3/4 cup spelt flour
1/3 cup unsweetened applesauce
1/4 cup cashew meal (or blanched almond meal)
2 tablespoons oat flour
2 tablespoons cacao powder
2 tablespoons pure maple syrup
2 tablespoons extra light olive oil
1 tablespoon virgin coconut oil
1 tablespoon pure vanilla extract
1 tablespoon vegan dark chocolate chips (eg Enjoy Life)
1 tablespoon golden flaxseed meal
1 tablespoon coconut sugar
1 tablespoon unsweetened shredded coconut
1 tablespoon white grape juice
1 teaspoon baking powder
1/2 teaspoon baking soda
A pinch Himalayan/sea salt

Combine all the ingredients in a large bowl and stir until everything has been mixed really well and thoroughly so there are no lumps.

Spray some non-stick cooking oil on a 4×8 inch bread pan (or any other you’d like to use).

Scoop the batter in there and even out the top so that it’s nice and flat. Bake in the oven for about 20 minutes. Insert a toothpick to see if it comes out clean. If so, then it’s ready. If not, give it a few more minutes and try again.
