Easy No Bake Carob Brownies

I got up and was just in the mood for some easy carob brownies. The reason why I have carob sometimes is because I’m trying to keep myself from having anything that might affect my sleep.

That being said, you don’t have to use carob, cacao works just as great!

This is one of those brownies that almost looks like a real chocolate cookie, but it tastes amazing the way it is without cooking it!

Also, oatmeal is seriously one of the greatest bases because it doesn’t require any cooking, unlike other flours that may taste a bit weird (brown rice flour, whole wheat, etc).

One thing I really enjoy about no-bake desserts is that it takes literally like 5 minutes to make, and doesn’t require all that much sweeteners. It’s great for saving money since most healthy sweeteners can be pretty darn expensive!

Also, is it me or does the pictures with bite marks seem to stir up your appetite more? I can sit on my computer, look at my own pictures and feel fine, until I see one where I’ve bitten into it, then suddenly it’s as if my stomach knew and wants some, NOW!

Easy No Bake Carob Brownies

3/4 cup old fashioned oats, ground into a flour
2 tablespoons old fashioned oats
2 tablespoons roasted carob powder (or cacao powder)
2 tablespoons unsweetened applesauce
2 tablespoons extra virgin olive oil
1 tablespoon almond butter
1 tablespoon brown rice syrup (or pure maple syrup)
1 tablespoon maca
1 tablespoon lucuma
1 tablespoon coconut milk
1 teaspoon pure vanilla extract
1 teaspoon vegan carob chips (or vegan chocolate chips)

To make the oat flour, simply add the amount of old fashioned oats into the blender and blend on full speed until a fine flour forms.

Add all the ingredients (this is a carob brownie, so I’ve used mostly carob ingredients, but you can use cacao stuff if you want) into a large bowl and mix it with a spoon. Get your hands dirty (clean it first though) and knead the dough until everything is really well mixed.

Form a rectangle, and cut it in small pieces and serve.

  • 2 tablespoons roasted carob powder (or cacao powder)
  • 2 tablespoons unsweetened applesauce

  • 1 tablespoon lucuma
  • 1 tablespoon coconut milk
  • 1 teaspoon pure vanilla extract
