Easy Orange Chocolate Mousse

I thought of this as I was lying in bed, it just came to be to combine orange with chocolate. Though I am usually the type who prefers a chocolate vanilla flavour, but trying out new stuff is always fun and rewarding, as I never know what I may discover.

So yes, this is pretty easy, as long as you have the equipment to grate the zest (skin) from the orange. I bought a special zester to do the job, but graters also work, though the pieces may come out finer/smaller.

Don’t be put off by the avocado, you really can’t taste it. If you do (I didn’t), add slightly more liquid sweetener and it should be gone. It’s a really easy thing to make, super healthy (you can even have it for breakfast), and fast.

I recommend using an avocado that’s just soft, the flesh should still be green, don’t let it turn too soft. I find that avocado seem to be similar to bananas in some ways, it has a stronger flavour when it’s really ripe.

Easy Orange Chocolate Mousse

1 large avocado
1 tablespoon agave/maple syrup
1 tablespoon finely shredded coconut
1 teaspoon pure vanilla extract
1/2 teaspoon rum extract
Zest of 1/2 orange
Juice of 1/2 orange
Cacao nibs (garnish, optional)

Just a zester or grater to grate the skin from half an orange. Put it in a bowl once it’s done.

Combine all the ingredients in a high speed blender, including most of the zest (reserve some for garnish). Squeeze the juice out of the orange into the blender.

Blend on full speed until everything is completely smooth. Spoon it into a bowl, garnish with extra orange zests and cacao nibs.

Note: It really doesn’t matter what type of orange you use. I didn’t even look at what I used, but be sure the juice is sweet, so don’t use one that tastes bitter. As for sweetener, I used a tablespoon of organic blue agave. I know that maple syrup would be equally great!
