Healthy Brownies with Superfoods

OMG, I woke up a bit late, and I was in a panic. WHAT AM I GONNA COOK TODAY?!

I always turn to brownies when I am too late to bake, because I usually do my walking exercises at 12:30. So brownies it is, but I needed to create a new taste, and I think this really did well!

I’ve been really into grinding up oat flour and using it as a base and kneading everything rather than putting stuff through the blender. I really think it’s giving the brownies a great taste and shows some of the whole pieces like whole sesame seeds!

Healthy Brownies with Superfoods

3/4 cup oat flour (ground up instant old fashioned/quick oats)
2 tablespoon almond/cashew meal
2 tablespoons extra virgin coconut oil
1 tablespoon extra virgin olive oil
1 tablespoon shelled hemp hearts
1 tablespoon cacao powder
1 tablespoon lucuma
1 tablespoon pure maple syrup
1 tablespoon white sesame seeds
1 tablespoon crushed pecans/walnuts
1 tablespoon unsweetened almond/coconut milk
1 teaspoon pure vanilla extract

If you haven’t made any oat flour, do that first. You can just grind up a heap of instant old fashioned or quick oats until it forms a very fine flour.

Add all the ingredients in a large bowl (remember to crush the pecans before you add it in) and stir with a spoon for a little bit. Then, use your hands to knead it until a big lump forms.

Shape it into a rectangle or square and cut off the sides, and cut it into smaller squares/rectangles.
