These don’t last long being solid in room temperature, so if you take them out, eat them fast!

This is one of my new favourite treat, banana ice cream with some kind of crumbly bottom and topping. It’s seriously divine and nobody would even believe this is healthy. I specifically did not add any sweetener to the crust (and urge you to not add anything either) because the ice cream layer is VERY sweet. When you bite them down together, you will not even notice that the crust isn’t sweet. Believe me!

This is seriously my most beloved dessert, and great news is, all the sweetness basically comes from the banana!

I think once you really get used to the banana taste, you would not mind that it’s “banana ice cream” rather than pure vanilla. I always thought frozen bananas just tasted better than regular. One thing I will never in a million years recommend is to heat it up, because that’s when a weird taste happens.

Healthy Vegan Ice Cream Cake with Chocolate Crumbles

Crust
1/4 cup almonds
1/4 cup old fashioned oats
1 tablespoon ground flaxseeds
1 tablespoon unsweetened almond milk

Ice Cream
2 frozen bananas
1 teaspoon pure vanilla extract

Topping
1 teaspoon cacao nibs
1 tablespoon coconut oil
1 tablespoon carob powder
1/2 teaspoon pure maple syrup

To make the crust: Add all the ingredients for the crust, including the almonds, oats, flaxseed and almond milk and blend until it’s crumbly but sticky. Spoon it out onto a small oven tray and press it tightly at the bottom.

To make the ice cream: Be sure you’ve frozen two bananas overnight. Add them and the vanilla extract in the blender and blend until it’s smooth and creamy. Spoon it on top of the crust and use a spoon to flatten the surface. Cover the oven tray with foil and put it into the freezer while you prepare the next set of ingredients.

Topping: Mix carob powder with coconut oil and pure maple syrup and stir well. We can this to be a little lumpy. Get the tray out of the freezer and spoon it on top, evening it out. Finally, sprinkle the cacao nibs on top. Put it back into the freezer for 2 hours to harden before serving.

    I love banana ice cream, it’s one of my favourites! I’ve never tried adding a crumbly bottom to it though! (I seriously can not say “crumbly bottom” without laughing.. I am such a child!)
    I think I will have to try this! (stop making so many lovely things! I’m going to be in the kitchen for years trying them all… :D )

      ROFLLLL crumbly bottom has me laughing too HAHAA!!
      AWWW LOLLL GOODIE that you’re going to be making things in the kitchen forever. I remember how blown away I was when I first tried banana ice cream. I can’t stop telling people now cos most people won’t believe how close it is to the real thing :D
