Seriously, I don’t think you can get healthier than this! Creamy, sweet and delicious ice cream made from nothing but pure fruits and vegetables. This is what you’ve been missing all along! Next time, I totally recommend you to make someone this, and don’t tell them what it is. I want to see their reaction!

Seriously, this is one of the most miraculous foods ever. Kind of like, you can’t imagine melted ice cream tasting good but when it’s frozen, it’s so fantastic. Bananas are the same. Melted banana mush is quite erm, not that great, but frozen – OH MAN it is SO GOOD!

So this is a strawberry type of ice cream, and the beet is just to intensify the pink-ness because strawberries alone seem to be a little weak!

I really stress the importance of stirring the mixture every 40 minutes or so when you put it in the freezer. Otherwise, you can always put it in an ice cream maker if you have one, but if you don’t stir it, the ice cream may clump together. I recommend not freezing this overnight, otherwise you may not be able to scoop it out!

Feel free to experiment with other flavours and toppings like cacao nibs, mint and such. You can even try adding some blackberries and/or raspberries. What you can do with this ice cream is virtually ENDLESS!

Healthy Vegan Strawberry Ice Cream with Chocolate Magic Shell

3 frozen bananas
5 frozen strawberries
1/4 cup frozen pineapples
1/4 cup beet
1 teaspoon pure vanilla extract (optional)

Chocolate Magic Shell
1 tablespoon coconut oil
1/2 teaspoon cacao powder

Peel and cut the bananas in half, and freeze them in a container overnight. Remove the green stems from the strawberries and add them in the same container to be frozen, along with the pineapples.

Add the frozen bananas, strawberries, pineapple, chopped beet and vanilla extract in the blender. Blend until the mixture is completely smooth, then put it in a container and close the lid. Put it in the freezer for about 5-6 hours, be sure to take it out every 40 minutes and stir with a spoon.

After the ice cream has been frozen for about 5-6 hours, get a small bowl and stir the cacao powder with the coconut oil. You do not need to add maple syrup or any other sweetener here because the ice cream is sweet, and if you eat them together, you will not notice that the chocolate part isn’t sweet.

Use an ice cream scoop (preferred) to spoon the ice cream in a bowl and drizzle the chocolate magic shell syrup on top, and watch the magic happen, baby!

You can also add some mint, cacao nibs, shredded coconut as topping.
