OMG these are so crunchy and delicious, I really love the way they turned out. Sorry about the mass list of ingredients, I’m moving soon (most likely) and need to use a lot of ingredients up, and the only way is to just add a bit of everything!

This is so awesome cos it’s hard on the outside and soft and moist on the inside. I baked mine for 25 minutes only, and it was great enough. Though do let it cool down, otherwise it will be soft on the outside as well!

AH having a chocolate treat like that is always so awesome, especially in the morning. It’s kind of my breakfast, haha! You can certainly make these into cookies, I think it would totally work the same way, and be even more crunchier.

OMG I love having this kind of stuff for breakfast, it’s heaven to eat something full of chocolate flavour. Don’t forget to spray the top of the bar with some oil so that the topping stuff you put on can stick better.

Oatmeal Almond Double Chocolate Bars

Base
1/3 cup blanched almond meal
1/4 cup instant old fashioned oats
1/4 cup oat flour
3 tablespoons coconut sugar
2 tablespoons canola/extra light olive oil
2 tablespoons potato flour
2 tablespoons golden flaxseed meal
2 tablespoons finely shredded coconut
2 tablespoons concord grape juice (or white grape juice)
2 tablespoons brown rice flour
1 tablespoon cacao nibs
1 tablespoon dark vegan chocolate chips (eg Enjoy Life)
1 tablespoon cacao powder
1 tablespoon dark cocoa powder
1 tablespoon refined/virgin coconut oil
1 tablespoon unsweetened applesauce
1 teaspoon pure vanilla extract
1/2 teaspoon ground vanilla powder (optional)

Topping
A few sprinkles flaked coconut
A few sprinkles dark vegan chocolate chips (eg Enjoy Life)
A sprinkle cacao nibs
A sprinkle sliced almonds
A sprinkle coconut sugar

Preheat oven to 350°F (176°C).

Combine all the ingredients for the base in a large bowl and stir it with a spoon until it’s very well mixed.

Spray some non-stick oil on a 8×4 inch bread pan and spoon the mixture inside.

Use your spoon to press down until it’s about half an inch thick, and spread out the entire pan. Press with the spoon to smooth out the top and make it flat.Sprinkle the flaked coconut, dark vegan chocolate chips, cacao nibs, sliced almonds and coconut sugar on the very top, be sure to spread them apart.

Give the top a generous spray of non-stick cooking oil, and use your fingers to press down a little. Then, bake in the oven for about 25-30 minutes (30 if you like it crunchier) and allow it to cool down. Carefully take it out with a flat spatula and cut into bars.
