Oatmeal Nutty Cookie Dough

Firstly before I go on to anything else, my version was pretty chunky because I used a food processor, and the nuts weren’t ground fine enough. But it tastes just as good, just you can taste little crunches in the nuts, which I happen to like. If you use store bought almond meal and oat flour, you won’t have this problem.

So yesterday I made my first ever chocolate chip cookies and it’s been ages since I made cookie dough I can just dig out of the bowl (yeah, I’ve always loved cookie dough more than the cookie as a kid) but there are some flours you simply shouldn’t eat raw, like wheat flour.

So here’s a cookie dough made from OATS, which taste just as good! (I haven’t tried baking them, so just eat them as it is, haha!)

Oatmeal Nutty Cookie Dough

1 cup instant old fashioned oats, ground into a flour (or oat flour)
1/2 cup almonds and hazelnuts, ground into a flour (or 1/2 cup almond meal)
1/4 cup unsweetened applesauce (1/4 cup green grape sauce or 1 mashed banana will also work)
2 tablespoons white grape juice
1 tablespoon almond milk
1 tablespoon coconut/extra virgin olive oil
1 teaspoon coconut sugar (maple syrup will also work)
1/2 teaspoon pure vanilla extract
A sprinkle of Himalayan/sea salt
1 tablespoon cacao nibs

Put the instant oats in a high powered blender and grind the oats until it becomes a fine flour. Spoon it into a large bowl. Add the almonds and hazelnuts and process until a fine flour as well, but be careful – don’t overdo it, otherwise the nuts will become nut butter! Spoon the nut flour into the same bowl.

(Alternatively, you can use 1 cup oat flour & 1/2 cup almond meal)

In a small pot, combine the applesauce (or green grape sauce/mashed banana), almond milk, coconut/olive oil, coconut sugar, vanilla extract and salt.

Simmer in medium heat for about 5 minutes until everything dissolves.

Pour the wet mixture with the dry and mix it up well. If you like it wetter, add a little more almond milk or grape juice.

Lastly, stir in the cacao nibs and eat as it is.
