Oven Baked “Fried Rice” with Vegan Sausage

I have to say, one of the most enjoyable things is when I find amazingly unique ideas and being totally inspired by them. This was what happened when I saw the Baked Fried Rice recipe on Oh My Veggies website. I have baked veggies in the oven before, but not rice. Why didn’t I think of that? What an ingenious idea! I absolutely loved the idea of chewy rice, and that’s something you can’t really get unless you kind of overcook the rice and drain out more of the water.

Also, this recipe calls for a vegan sausage recipe I just made today. That recipe is a whole other thing, and not everyone may have the ingredients or the time to make that, so if you really can’t make it, you can omit it, or replace it with something similar. But I have to say, the sausage totally made the rice taste amazing and meaty!

I really loved baked fried rice because I think when you fry it, sometimes the water takes much longer to escape, which often leaves you with soggy fried rice, which ain’t pretty. This is just perfect. I think I will be baking my fried rice a lot more from now on!

Oven Baked “Fried Rice” with Vegan Sausage

1/2 cup frozen peas
1/2 cup frozen corn
5 baby carrots, diced
3-5 mushrooms, diced
1 small yellow onion, diced
4 cups freshly cooked brown rice (recipe here*)
2 tablespoons less sodium soy sauce
2 tablespoons extra light olive oil
1 teaspoon smoked paprika
A few sprinkles freshly ground pepper
A few sprinkles Himalayan/Sea salt (to taste)
1 homemade vegan sausage (recipe here*)
1 scallion

You will need to make some vegan sausage before you start on this recipe.

Cook a batch of brown rice if you haven’t. You will need to make it with 2-3 cups of raw brown rice. You may get left overs but you can just have them later. Follow these instructions to cook them.

Preheat oven to 350°F (176°C).

Dice the carrots, mushrooms and onions into small cubes, them add that, along with the frozen peas and corns into an oven tray. Once the brown rice is cooked, add four cups of cooked brown rice. Drizzle on top with the soy sauce, olive oil, paprika, pepper and salt. Dice up the vegan sausage into small cubes as well and add it to the rice and veggies. Use a spoon and stir everything up until everything is evenly mixed.

Bake in the oven for about 50 minutes, stirring the rice every 15 minutes. While the rice is cooking, slice the scallions in a slanted way. Once the oven is turned off, stir in the scallions and let it sit for about a minute, then serve.
