This recipe doesn’t make a lot, but I think the intense flavour of it is worth it just to have a little bit!

So I just discovered that you can totally eat almond meal without any problems. For a long time, I’ve been scared of random flours or meals because I don’t know what’s edible.

I think I get way too scared about getting potential problems with certain foods because I’m terrified of being sick, and that’s why I’ve always been afraid of raw almonds, as I remember reading some article saying they were toxic. But then, I do think they’re heat treated, right?

Sometimes, it’s so easy just to look into the large ingredient box and pick random things out that I feel like eating. There’s always new combinations that create awesome new taste.

Raw Almond Chocolate Chip Cookie Bars

1/3 cup blanched almond meal
2 tablespoons golden flaxseed meal
2 tablespoon cashew meal
1 tablespoon finely shredded coconut
1 tablespoon lucuma
1 teaspoon vegan chocolate chips (eg Enjoy Life)
1 teaspoon cacao nibs
1 tablespoon pure maple syrup
2 tablespoons walnut oil (or other preferred oil)
1 teaspoon pure vanilla extract

Add all the ingredients into a large bowl and stir it around until everything is well mixed.

Bring the dough onto a flat cutting board and shape it into a rectangle, then cut the edges off, and cut it into bars.
