Raw Almond Chocolate Cookies

How did I not think of making almond cookies like this before? I guess I never actually tried this combination. I still LOVE coming up with new ideas and mixing different ingredients to form desserts.

I recommend using those smaller sized ice cream scoops to get the really awesome half circle shape for the cookies, for some reason I never thought of that, till I realised it would be a great way to get the shape that you want. All you need to do is stick the dough in and press it tightly.

Remember that because this basically feeds two people, it isn’t a recipe that’s really big in number, so with a blender, you have to use some kind of food tamper to press down. I used Vitamix for this, and the food tamper helped in blending all the stuff up.

Also, I do recommend that you take the mixture out, use a spoon to scoop it around, then blend again, then repeat a few times. Otherwise, there’s always a chance you will come across a giant piece of almond that won’t be blended properly.

Raw Almond Chocolate Cookies

1/2 cup whole almonds
1/3 cup oat flour
1 tablespoon cacao nibs
2 tablespoons finely shredded coconut
2 tablespoons brown rice syrup
1 tablespoon golden flaxseed meal
1 tablespoon virgin coconut oil
1 teaspoon pure vanilla extract
A small pinch Himalayan/sea salt
2 teaspoons vegan dark chocolate chips (eg Enjoy Life)

Combine all the ingredients except the dark chocolate chips in the blender and blend until it becomes a sticky mixture with not a lot of big pieces remaining.

Spoon the mixture into a bowl, add the chocolate chips and stir it around a little.

Fill a small ice cream scoop with it and press down so it can become the shape of a cookie. Keep repeating until all the dough is used up.

    Great recipe. It is lovely to have something like this not using dates which are so bad for blood sugar levels. I will definitely be giving these a try :)
