I’m always on the lookout for more cookie dough recipes because I LOVE them. It’s one of the easiest things to make and who needs to bake cookies when you can eat the dough, right?

I discovered a new wonderful flour that can be used for dough, and that is buckwheat flour. That is something people tend to eat raw without problems. I wouldn’t even try regular flour uncooked!

With the sweetener, you can use maple syrup if you want a mild, sweet taste. But if you don’t mind a little kick of bitterness, add molasses instead. It’s super healthy, or much healthier than your regular sweetener because of all the awesome minerals it contains.

Raw Buckwheat Chocolate Chip Cookie Dough

1/2 cup buckwheat flour
2 tablespoons almond meal
2 tablespoons oat flour
1 tablespoon pure maple syrup or molasses (use molasses if you don’t mind a slight bitter taste)
2 tablespoons unsweetened applesauce
2 tablespoon unsweetened coconut milk
1 tablespoon extra light olive oil
2 teaspoons cacao powder
1-2 teaspoon vegan chocolate chips
1 teaspoon pure vanilla extract

Mix all the ingredients in a bowl and stir until everything is even.

Transfer to a small bowl or eat it as it is, or dip crackers/breads or cookies on it.
