I got a packet of cocoroons a few months ago and I haven’t stopped obsessing about them since. THEY ARE JUST TOO DELICIOUS!

The best thing is, they’re probably easier to make than anything else. All you really need to do is put it together! I didn’t even need to blend anything, and just ate it right away once it was done. I don’t think desserts can get easier than this!

Those aren’t exactly the same as I believe you need to dehydrate it at least for it to be hard, but I actually really enjoyed the softer versions. I think that if you don’t dry it out as much, you save on the maple syrup cos it just seem to float away with vapour and you end up needing to add greater amounts.

If you decide to dehydrate or bake them, I will advise that you add a little more pure maple syrup.

Those pictures actually look like mini snowballs with a bit of bark and soil in them, haha!

I’ve only made four macaroons, because I really don’t think you should overdose on it, with the amount of fat. Not saying coconuts are unhealthy, but I think having it in moderation is the best, so four was enough for two people! You can totally make bigger batches if you’ve got more people to feed.

Raw Vegan Coconut Macaroons

1/4 cup & 2 tablespoons finely shredded unsweetened coconut
1 tablespoon melted virgin coconut oil
1 tablespoon almond meal/flour
2 teaspoons pure maple syrup
1 teaspoon coconut milk powder (optional)
1 teaspoon pure vanilla extract
1 teaspoon cacao nibs

Combine all the ingredients in a bowl, and mix it together until it’s crumbly.

Use your hands and shape them into a macaroon. If you like it dryer, simply leave it sitting anywhere in the room for a few hours. If you want to eat it as it is (which tastes delicious), bite into them and eat it!
