This is a really awesome thing to have for breakfast, because so far, it’s the most filling thing, despite that it’s mostly in a liquid form! I think it has to do with that avocado!

I think the avocado here really makes it taste richer (and blends so well with the chocolate), and you can’t taste it, I promise!

So anyway, this is a super healthy breakfast you can make if you don’t have much time for anything else. Just be sure you’re using a powerful blender like Vitamix, otherwise you may have some trouble with the frozen bananas.

Rich Chocolate Banana Ice Cream Pudding

3 frozen bananas
1 small avocado
1/4 cup cashews (or other nuts/nut butter)
A small handful cacao nibs
1 tablespoon cacao powder
1 tablespoon virgin coconut oil
1 teaspoon vanilla powder/paste or pure vanilla extract
1 pitted date

Topping
Finely shredded coconut
Cacao nibs

Add all the ingredients into the blender. Don’t forget to scoop the avocado flesh out and throw away the pit, and remove the pit from the date as well.

Blend until it’s smooth, but still have some crunchy bits (to give it a crunch when you’re eating it).

Spoon it in a bowl, add some topping such as shredded coconut and cacao nibs, and eat it right away (or put it in the freezer so it doesn’t melt).
