I’ve been making this pretty much every day and it has been SO AMAZING! I just have it for breakfast and it’s totally filling!

I recommend using carob powder as I find that gives it a special fragrant flavour, added with cacao nibs, it’s really perfect!

Adding toppings like sprinkles is totally your choice, if you want to present it well like a cake, then go for it!

I personally love to just roll it into balls and eat it as it is without any topping!

I totally love how the buckwheat groats here make this really crunchy! Though please don’t replace it with buckwheat flour.

Rich Chocolate Energy Brownie Cake

1/4 cup buckwheat groats
1/4 cup instant oats
1/4 cup walnuts
1/4 cup almonds (I used roasted)
2 tablespoons finely shredded coconut
2 tablespoons virgin coconut oil
1 tablespoon cacao nibs
1 tablespoon cashew
1 tablespoon carob powder
1 tablespoon dark grape juice (or other fruit juice)
2 large pitted dates (or 4 small)
1 teaspoon pure vanilla extract
1 teaspoon coconut extract

Topping
Vegan sprinkles (optional, eg Sprinklez)

Add all the ingredients into a high speed blender like Vitamix, blend until it becomes crumbly and sticky, then use a spoon to toss it around, blend some more and scoop it out.

You can put it on a flat surface and make it into whatever shape you want, such as a circle, rectangle, etc.

Add desired topping and cut it up and serve.

Note: If you’re making it like a cake, you may want to add a frosting, like combine cacao powder, maple syrup and coconut oil (or avocado, or dark chocolate chips).
