THIS IS SOO GOOOOOOOD!!

I just ate like half a bar of this and greatest thing is, I didn’t feel guilty at all! Seriously, I can’t believe it. Avocados here CANNOT be tasted at all, in fact – all I taste is this rich, chocolate flavour.

You HAVE to make this for your family and friends (and don’t tell them what’s in it).

I would usually put date paste in this but I kind of ran out and unless I have a whole packet, it’s almost impossible to make date paste.

But anyway, these won’t be hard for long in room temperature, so keep them in the fridge/freezer until you need to eat them. If you want them to harden more, try adding a little more coconut oil as that tends to get the stuff more solid.

I am absolutely CRAZY about the idea of using avocados as a thick, butter. I might even try and bake with it soon like use it in place of butter and see how it will turn out. Though I think when avocados are microwaved, they taste quite awful, hopefully baking it won’t do the same.

Rich and Fudgey Vegan Chocolate Bar

1 ripe avocado
2 tablespoons cacao powder
1 tablespoon maca
1 tablespoon coconut sugar (or date paste)
1 teaspoon pure vanilla extract
1 teaspoon molasses
1 tablespoon coconut oil
1 teaspoon cacao nibs

Topping: Shredded coconut, Cacao nibs, goji berries.

In a high powered blender, add the ripe avocado, cacao powder, maca, coconut sugar (or you may want to use date paste, date sugar or other unrefined sugar), vanilla extract, molasses and coconut oil in the blender.

Blend until the mixture is completely smooth. This may take a few minutes of stopping, stirring and blending again.

Spoon the mixture on a mini baking pan and mix the cacao nibs in and stir.

Use a spoon to flatten out the surface and put it in the freezer for about 30 minutes. Take it out, use a knife to cut the four corners and flip it upside down and get the chocolate out. Be really careful because it could break. Use a very small, flat spatula.

Once the chocolate is out of the oven tray, put it on a plate and freeze it for 20 more minutes.

Take it out and add topping of your choice, such as shredded coconut, cacao nibs or goji berries and cut it up and serve.
