This is one of the recipes I’ve been wanting to make forever but I was so scared because I had never done anything like this before and didn’t know how it would turn out. I’m so glad I tried because it was so easy and fun, and delicious too!

If you are unsure of where to get glutinous white rice flour, look in the Asian grocery stores as I know they always have them. There’s surprisingly no gluten (according to Wikipedia) in glutinous rice, but the name is that cos the rice is super sticky!

Be sure you don’t leave the dough out too long without covering it because the dough is likely to dry out and cause the rice cakes to harden in the middle, which makes it not taste as good. So to prevent that, always keep the lid closed.

I totally love how this feels like the cake of gold because we’ve got the osmanthus that is gold, then the raisins that’s also gold, and walnuts, which has some gold in it too! Doesn’t that just feel awesome? We’re eatin’ the dessert of GOLD!

Steamed Osmanthus Rice Cakes

1/2 cup brown rice flour
1/2 cup glutinous white rice flour
1/2 cup white rice flour
1/4 cup & 1 tablespoon white grape juice
1/4 cup water
3 tablespoons dried osmanthus flowers
2 tablespoons arrowroot
2 tablespoons crushed walnuts
2 tablespoons golden raisins
2 tablespoons unsweetened almond milk
1 tablespoon finely shredded coconut
1 tablespoon extra light olive oil
1 1/2 teaspoon pure powered stevia
1 teaspoon pure vanilla extract

Add all the ingredients in a large bowl and stir until it’s well mixed, then use your hands to knead until it forms a lump of smooth dough.

Prepare a large steamer and start boiling the water on the bottom.

Place a damp cheesecloth on the bottom of the steamer and roll the dough into a long piece of log. You may wish to cut the log in half so that it’s smaller.

After the water starts boiling, place the rice cake log/s on the damp cheesecloth and on the steamer. Steam on high heat for a total of 22 minutes, then cut it into small thin circles and serve.
