Strawberry Mylkshake

I have this precious tub of strawberries and they are so rare at this time of year (winter when I made it), so I had to make something awesome from it!

When I first made this, it was pretty thin and not much of a milkshake, so I froze it, hoping that it would thicken and I am so glad I did!

After freezing the stuff and stirring a lot, it became almost like frozen yoghurt! I think if I had added any sour stuff like lemon juice, this could be healthy frozen yoghurt!

The coconut milk I used was thick and creamy, I think that brings out flavours even more! Feel free to use full fat.

Be sure the banana is frozen for some time in the freezer as I find that ripe frozen bananas especially have a wonderful creamy taste.

Strawberry Mylkshake

2 cups ripe strawberries
1 cup almond milk
1/2 cup cashews
1 cup frozen bananas (relatively ripe)
1 teaspoon pure vanilla extract
A pinch of Himalayan pink salt
1 cup thick coconut milk/cream (eg full fat)

Add all the ingredients in a high speed blender and blend until it’s a smooth liquid.

Pour the liquid into a glass container with closed lid and freeze it for about 5 hours, be sure to stir every couple of hours so that it doesn’t form into clumps of ice. Once the liquid is nice and thick (it may be very lumpy at this stage, which is totally fine), put it back into the blender and blend on full speed until it becomes very thick and smooth.

Pour it into a glass jar and drink away!

Note: Freezing this for about 5 hours really brings out the thickness and creaminess. So, please don’t leave that part out!
