These are like wonder cakes because you put them in your mouth, and they almost melt, and you feel as if you’re in heaven eating some divine dessert that’s suppose to make you fat and unhealthy, and you start to panic, until you realise all the ingredients are so healthy that you have nothing to fear, yet at the same time you can’t even begin to comprehend why.

Yes, this is one of those moments where I’m eating it, expecting it to be bad, but I keep having to remind myself that it’s alright to eat this because it’s healthy!

How could crust made from oats, nuts, grapes and such not be healthy? Seriously!

I am absolutely loving the idea of adding fruits like grapes into crusts. I notice most people use dates but I think adding fresh fruits can work out even better as it adds moisture to the crust, and makes it sticky. Otherwise, they tend not to stick together.

This makes only one small cake, but even that is enough for two people, I think!

Please note that I used half an avocado only, but I know that avocado may not be everyone’s tastes, so if you really don’t want to use avocado, you can add a mixture of coconut butter/oil, cacao butter. Though, I believe using half an avocado is the healthiest option! Also, you can choose if you want to use oven toasted oats or roasted nuts or raw.

Super Healthy Chocolate Fudge Cake Delights

Crust
1/2 cup & 1 tablespoon old fashioned oats
1/4 cup almonds
2 tablespoons walnuts
1/4 cup fresh red grapes (approx 6)
1 teaspoon pure vanilla extract
1 teaspoon dark unsweetened cocoa powder
1 teaspoon coconut/almond milk

Filling
1/2 large avocado (or 1 small) *You can also replace with 1/2 cup mixture of avocado, cacao butter and/or coconut oil/butter if you want.
2 tablespoons cacao powder
1 tablespoon pure maple syrup
1 tablespoon lucuma
1 tablespoon coconut milk powder (optional)
1 tablespoon pure vanilla extract

Blend all the ingredients for the crust in a high speed blender until it becomes sticky. Spoon it out and press it onto the sides and bottom of a small, round bowl. You can also use muffin trays for that. Keep a small amount of crust to close the top.

Blend all the ingredients for the filling until everything is well mixed and there are no longer clumps. Spoon it out into the centre where there’s a big hole. Don’t fill it too full!

Fill the top with the remaining dough and press it so that it sticks. Cut the sides with a sharp knife and tip it around to allow the cake to fall out. Be careful though, if you don’t cut it properly, some dough may stick to the bowl.
