Today is one of those lazy mornings which I just didn’t feel like baking. You know some mornings, you wake up with an excellent sleep and you feel ready to take on the world, but others, you feel tired and just want to make something easy? Yes, this is one of those moments.

Though I do love it when that happens because I keep coming up with new combinations of different superfoods to make nice tasting energy bars. Though if you are not one of those people who collects ingredients like me, this may be a little frustrating because it asks for a little of each.

Feel free to experiment around with the ingredients, or even sweeteners. I used date paste because I had some left over, but you may want to use pure maple syrup or something else.

Super Powered Goji Oatmeal Energy Bars

1/2 cup oat flour (ground up instant oats)
1/4 cup instant old fashioned oats
2 tablespoon date paste, room temperature or slightly warmed
1 tablespoon & 2 teaspoons pistachio oil (or other preferred oil)
1 tablespoon chia seeds
1 tablespoon golden flaxseed meal
1 tablespoon goji berries
1 tablespoon sliced almonds
1 tablespoon hemp hearts
1 tablespoon finely shredded coconut
1 tablespoon & 1 teaspoon unsweetened coconut/almond milk
1 teaspoon dried cranberries
1 teaspoon pure vanilla extract
1 teaspoon vegan chocolate chips (eg Enjoy Life)
1 teaspoon cacao powder

Be sure to have grounded up the oats beforehand to make at least 1/2 cup of oat flour. Also, you will need to grind up a packet of dates to make about 2 tablespoon date paste.

Combine all the ingredients into a large bowl except the cacao powder and mix very well.

Use your hands to knead everything until it comes together as a big sticky lump, then work the cacao into the mixture and give it a few good kneads.

Shape the dough into a rectangle and carefully cut away the edges, then into bars.
