Vegan French Toast (Sweet or Savoury)

I remember the first time I had French toast was when a friend of mine came over for a visit. I had no idea what it was about then, and soon learned about cracking an egg on it.

I’ve made quite a few different foods with vegan mock eggs, and I had to try this.

But I have to say, this was the first time I actually noticed that French toast is usually eaten sweet. I always thought it was a savoury dish for some reason. Anyway, I always love using garbanzo and fava flour for yellowy-egg stuff, even though it doesn’t taste the same, it’s great enough.

But I will warn you, fava beans have a really terrible stench when it’s raw, so please cook the bread thoroughly, otherwise it will not taste good.

Sadly, I had no strawberries or blueberries because I think those would’ve made great companions for the toast.

Vegan French Toast (Sweet or Savoury)
Serves: 2
Ingredients
  • 4 slices sprouted whole grain bread (I used Trader Joe’s)
Vegan Egg Mixture
  • ½ cup unsweetened almond milk
  • 2 tablespoons garbanzo and fava flour (or garbanzo flour, millet flour)
  • 1 tablespoon golden flaxseed meal
  • 1 tablespoon nutritional yeast
  • 1 teaspoon pure maple syrup
  • A pinch of Himalayan/sea salt
  • A few sprinkles ground nutmeg
Serving (optional)
  • A drizzle pure maple syrup
  • 2-3 slices granny smith apple
  • 2 slices lemon
  • Any other preferred fruit
  • 1-2 teaspoons flaked coconut
  • OR ketchup and a few sprinkles salt and pepper (savoury version)
Instructions
  1. If the bread slices are frozen, take it out and let it defrost while you prepare the other ingredients.
  2. In a medium sized bowl, add the almond milk, garbanzo and fava flour (or the other flour options), golden flaxseed meal, nutritional yeast, maple syrup, salt and nutmeg. Stir very well until it’s completely smooth and no clumps of flour is found.
  3. Spray some non-stick cooking oil to a frying pan (preferably non-stick as well).
  4. Dip the bread in the bowl and let the mixture cover both side of the bread, and place the bread carefully on the frying pan. Do this to another piece of bread and place it on the frying pan as well. (I fried two slices of bread at a time).
  5. Turn the heat to medium high-high (6). Fry one side for 5-8 minutes until it’s golden brown, then flip over and fry for another 4-7 minutes until it’s also brown. Alternatively, you can flip as soon as they can be flipped, and keep flipping back and forth until they reach the brownness you desire.
  6. Be sure not to under cook these, otherwise the garbanzo and fava flour will have a really horrible taste.
  7. Once cooked, place them on a plate and add desired fruits, maple syrup and flaked coconut (if you prefer a sweet version), or drizzle with a little ketchup and sprinkle with salt and pepper.
