Oh my, I remember the first time I tried making a lemon cake bread like this, it was disastrous. I think I put like 2x the amount of liquid and made it watery and thin, which of course took a very long time to bake, actually, I should say that it didn’t bake. The centre stayed gooey!

Whereas, the outside became this iron hard crust which was almost unbiteable. Good times, good times.

Have you had moments like this? When you first start with something, you’ve got no idea what you are doing, and just want to try it out, and end up with a mess?

I’m really glad that disaster cake didn’t stop me from baking. But as time went, I learned more and more about how to make different types of cakes and breads. I’ve learned to use one recipe that worked, and modify it so that you can change its flavour, but still have ti taste as good.

This is a lemon chia seed bread, with some chocolate chips just to spice things up.

I was inspired to make this after realising just how awesome the carrot cake I made yesterday turned out. As you know, I don’t like things too sweet, and this isn’t too sweet, but with a bit of glaze, it turned out perfect for me.

Vegan Lemon Chia Seed Chocolate Chip Bread

1 cup spelt flour
1/2 cup unsweetened applesauce
2 tablespoons pure maple syrup
2 tablespoons oat flour
2 tablespoons golden flaxseed meal
2 tablespoons chia seeds
2 tablespoons extra light olive oil
1 tablespoon virgin coconut oil
1 tablespoon dark vegan chocolate chips (eg Enjoy Life)
1 tablespoon lemon juice
Zest of 1/2 lemon
2 teaspoons pure vanilla extract
2 teaspoons baking powder
1/2 teaspoon baking soda

Glaze
1-2 teaspoons brown rice syrup/pure maple syrup

Add all the ingredients into a large bowl. Use a grater to grate the skin (zest) off half a lemon. The grated skin should be extremely fine. You can also use a special zestor to do the job.

Stir everything until it’s all mixed very evenly without anything sticking together. Do be careful because chia seeds can clump together.

Spray some non-stick cooking oil on a 4×8 inch bread pan (or any other pan of choice) and scoop the batter inside. Even out the top so that it’s nice and flat, and bake in the oven for about 25 minutes.

Insert a toothpick to see if it comes out clean. If so, then it’s most likely to be ready. Allow it to cool and if desired, add a teaspoon or two of brown rice syrup/pure maple syrup on top as glaze and serve.
