Okay, like, MY MIND IS BLOWN.

I just learned that portabella, cremini, white button mushrooms are like the SAME THING, except difference in age. The white ones are the young ones, the cremini mushrooms are the sort of teenager, and the portabella is like the dad or the mum. OMFG!

I NEVER KNEW THAT! How did I go through my life eating mushrooms and not even knowing something like that? This reminds me of the time when my mind was blown learning that green tea, oolong tea and black tea all came from the same tea plant!

How I found out about the mushrooms was that I got this pack of mushroom, it was Trader Joe’s Stuffing Portabella mushroom, so I looked it up, and couldn’t find much info, only to learn they were the same as cremini mushrooms!

Anyway, today is a meaty vegan day. I want to show you how you can make what tastes and looks like minced meat. You can use this for rice, pie filling, or anything else you can think of. Seriously with this, who needs to buy meat from a poor cow or pig? Okay, I know there are some difference in taste, but it’s seriously great enough!

Even though this looks like just minces, I tried to add as much vegetables as I can to make it healthier, like there’s a hidden tomato in there, some mushrooms, garlic and onion. I think the mushroom broth was so necessary, it added extra sweetness due to the onion. You can also check a detailed recipe for the onion broth here (only the first part of the recipe).

Vegan Minced Meat with Onion and Mushrooms

1 tablespoon extra light olive oil
2 cloves garlic
1 small onion
1 cup tvp-textured vegetable protein (mixed with 3/4 cup boiling mushroom broth)
2 cremini mushroom (also known as baby bella/stuffing portabella mushrooms)
1 cup mushroom broth
1 tablespoon cornstarch
2 cremini mushroom (also known as baby bella/stuffing portabella mushrooms)
1 Roma tomato
2 tablespoons low sodium soy sauce
1/4 teaspoon Himalayan/sea salt
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
1 teaspoon white cooking wine
1/2 teaspoon fennel seeds
A few sprinkles ground pepper
A pinch of red pepper flakes

Rice Bowl
1-2 bowls cooked brown rice
1/4 scallion (garnish)
A sprinkle white sesame seeds (garnish)

Note: Be sure to have the mushroom broth already made. Simply chop up 2 cups white mushrooms, 1 yellow onion and a couple garlic cloves. Fill the large pot with 7 cups water, bring to boil, and simmer for 2-3 hours.

Also, prepare the cooked brown rice, following the recipe here (just the first part for the plain brown rice).

Peel and finely dice the garlic and onion into very small little pieces. Put it in the frying pan along with the olive oil. Turn the heat to medium high-high (6, or just under, stove should not be red) and cook the onions and garlic for about 10 minutes, be sure to stir a lot. It should have browned a lot.

Add the one cup of mushroom broth, cornstarch, 2 cremini mushrooms, tomato and soy sauce in the blender. Blend until it’s a completely smooth thick liquid.

Meanwhile, boil the 3/4 cup of mushroom broth if it’s not hot, and pour it in the tvp. Stir and let it soak up the liquid. At the same time, finely dice two of the cremini mushrooms (the other two is to be blended).

After the onions have been cooking for 10 minutes, add the tvp and diced mushrooms. Stir around and let it cook for 2 minutes.

Add the blended liquid and stir. Then, add the salt, garlic powder, onion powder, smoked paprika, white cooking wine, fennel seeds, ground pepper and red pepper flakes.

Let it cook for 12 minutes, then turn the heat off. Let it cool off with no lids covered on it. It will also help dry it a little.

Everything Else: Cook the brown rice according to this recipe.

Be sure to have a few pieces of scallion sliced. I did it in a slightly slanted way to make it look prettier. Spoon the rice onto the bowl, then add a few spoonfuls of the minced vegan meat, top with the chopped scallions, and add some sesame seeds on top.

Or, you can make Sloppy Joes or pies with it, or anything else that calls for this kind of food.
