Vegan Plain Cake Doughnuts with Gooey Chocolate Sauce

Note: To make this gluten free, simply use the gluten free type of oats to grind into a flour.

Ever since I had those chocolate doughnuts the other day (still have no idea how it’s meant to be spelt, because I sear I’ve seen Donuts, but then doughnuts seem to be the real one…) I’ve been wanting to make a plain version from the same recipe (main idea).

Actually, this is how I save a lot of time and avoid failures. Use a recipe that has worked in the past and tweak it a little!

If it worked once, it has to work again, right? Unless some major physics was changed without you knowing!

Anyway, I experimented with a few different frosting and my favourite was the chocolate one. However, the amount I listed only makes enough for about two doughnuts, so if you want more, you may have to double the recipe. You can sprinkle some finely shredded coconut on it.

Another idea for a frosting is using coconut milk powder with a little coconut milk, cornstarch and maple syrup. That has worked really well in the past!

OMG, these doughnuts are just SO GOOD and DELICIOUS! If you’re making them, eat it before someone else stealz them!

Vegan Plain Cake Doughnuts with Gooey Chocolate Sauce

1/2 cup old fashioned oats, ground into a flour
1/4 cup brown rice flour
1/4 cup almond meal/flour
2 tablespoons coconut flour
2 tablespoons potato starch
2 tablespoons arrowroot
2 tablespoons golden flaxseed meal
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 cup & 2 tablespoons white grape juice
1/4 cup unsweetened applesauce
3 tablespoons extra light olive oil
3 tablespoons pure maple syrup
1 tablespoon unsweetened almond milk
1 tablespoon pure vanilla extract

Frosting (your choices)

*Chocolate Flavour
1 tablespoon virgin coconut oil
2 teaspoons cacao powder
1 teaspoon pure maple syrup

Super Health Topping
2 tablespoons & 1 teaspoon unsweetened coconut milk
1 tablespoon lucuma
1 tablespoon maca
1 teaspoon pure vanilla extract
1/2 teaspoon cacao powder
1/2 teaspoon pure maple syrup

Sugar Powdered
1 teaspoon coconut sugar

*Chocolate flavour was my favourite. You may find the lucuma and maca one to be slightly bitter, so don’t use if you don’t like bitter.

Preheat oven to 350°F (176°C).

If you don’t have any oat flour, make it by throwing a big scoop of oven toasted old fashioned into the blender and blend until a fine flour forms. Measure out 1/2 cup. (I like to make a big batch of oat flour and put them in a container to be used later.)

Add all the ingredients for the doughnuts (not the frosting) into a large bowl and stir and mix very well until the batter becomes a wet, fluffy and even.

Spray some non-stick cooking spray on a doughnut pan and scoop the batter into the pan, be really careful as it will fly all over the place. Try and flatten it and scrape off batter that’s sitting the centre.

Bake in the oven for about 19-20 minutes.

While the doughnuts are baking, make your choice of frosting/topping. To make them, simply mix together the ingredients in a small bowl. With the chocolate flavour, you may want to chill the chocolate sauce in the fridge for a little while. If you want the chocolate to be solid, you will need to put the doughnuts in the freezer for a little while to cool it down.

After the doughnuts have been baking for about 19-20 minutes, insert a toothpick in the centre and see if it comes out clean or with a few crumbs. If so, take the doughnuts out and allow them to cool down while the doughnuts

Spread the frosting of choice on top of the doughnuts. If you’re using the chocolate flavour, put the doughnuts in the freezer for a few minutes first.
