Vegan Vanilla Slice with Chocolate Topping

This one is AMAZING, probably one of my favourite recipes of raw desserts so far, just because the chocolate is so very rich, I finally used some vegan chocolate chips in there, rather than JUST coconut oil. It made it taste so freaking amazing!

I tried to make this as vanilla as I could. The better than milk rice powder can be substituted with any other white vanilla sweetish powder, or protein powder. You can also leave it out if you really want, but do add a bit more vanilla.

Feel free to use vanilla beans in this, we want this to be VANILLA, right? So we have to bombard it with lots of vanilla things. Mwahahaha! The vanilla powder I bought was actually dark coloured, and was the Ojio brand. I absolutely love the intense flavours!

I really love that these slices are so firm. OMG it was so good to put in the mouth. I don’t think they need to be frozen too long, as long as the chocolate almost sets, you’re fine. I am just so freaking crazy about this!!!

Okay seriously, YOU ALL NEED TO GO MAKE THIS for people who hate healthy food! Even though having large amounts of this isn’t that healthy, this is still MUCH MUCH healthier than your average dessert you can buy in packages in the supermarket!

Vegan Vanilla Slice with Chocolate Topping

1/2 cup cashews
1/3 cup old fashioned oats
1 tablespoon better than milk rice powder (vanilla)
1 tablespoon goji berry powder (or goji berries)
1 tablespoon finely shredded coconut
1 tablespoon golden flaxseed meal
6 pitted dates
1 tablespoon pure vanilla extract
1 tablespoon extra light olive oil (or canola/grapeseed oil)
1 teaspoon ground vanilla powder

Chocolate Topping
1 tablespoon vegan dark chocolate chips (eg Enjoy Life)
1 tablespoon extra virgin/virgin coconut oil
2 teaspoons cacao powder
1 teaspoon pure maple syrup
1 teaspoon pure vanilla extract

Add all the ingredients for the vanilla slice (not the chocolate topping) into the blender and blend/pulse until it becomes crumbly and a little sticky. The blender I used was Vitamix, with the help of a food tamper (or else you may have a bit of trouble as there’s so little ingredients).

Align a thin piece of baking parchment paper on a mini bread pan.

Spoon the batter inside and press it down with a spoon until it’s flat on the top. Put it in the freezer while you prepare the chocolate topping.

Chocolate Topping: Add the tablespoon of dark chocolate chips in a tiny microwave safe bowl and heat it up in the microwave for 45 seconds to a minute until most of it has melted.

Add the coconut oil, cacao powder, maple syrup and vanilla extract and stir with a small spoon until everything becomes a thick liquid.

Pour it on top of the vanilla slice in the tray and allow all the chocolate to evenly coat the surface. Then, put it in the freezer for 15-20 minutes until it hardens to the level you desire.

Cut into squares and serve.
