What do you do when you have a bunch of ripe bananas that are too ripe to eat? MAKE BANANA BREAD of course. This is really easy and makes sure that you don’t waste the bananas, as I notice that they can be like green one day and a couple days later without you even realising, they’ve got black spots.

Sometimes when I try make bread or cake, I notice that it can be undercooked. This time, it was actually really great, wasn’t wet in the middle at all! I think partially because I gave the oven a pretty good kick start with preheating it nice and early. If you just turned on your oven, wait some minutes!

I really adding just that little bit of chocolate chips in there, really spiced it up! I was also excited that the banana bread actually turned golden in the oven. I have to say, I sometimes have trouble with baking, like stuff in the oven does not like to turn gold in my oven for some reason, even when I’m following someone’s recipe to a T.

This makes quite a good amount, at least enough for two people to fill their stomachs full.

Be sure your banana isn’t too large or small, and needs to be at least ripe, otherwise it won’t be sweet enough or may make it too wet. If you find that your mixture is particularly wet, you can skip the grape juice (but do not replace with water, it’s there to add sweetness!)

Whole Wheat Banana Chocolate Chip Chia Seed Bread

2 ripe medium bananas
1 cup whole wheat pastry flour
1/2 cup brown rice flour
2 tablespoons golden flaxseed meal
2 tablespoons white grape juice
2 tablespoons extra light olive oil
1 tablespoon virgin coconut oil
1 tablespoon chia seeds
1 tablespoon potato starch
1 tablespoon arrowroot
1 tablespoon finely shredded coconut
1 tablespoon vegan chocolate/carob chips (eg Enjoy Life, Sunspire)
1 tablespoon pure maple syrup
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon pure vanilla extract
A pinch Himalayan/sea salt

Preheat oven to 350°F (176°C).

Put the two medium bananas in a blender and blend until it’s a smooth liquid. It’s best to blend it rather than mash with a fork, to prevent lumps.

In a large bowl, combine all the ingredients, including the mashed banana puree together. Use a spoon to mix the batter very well until everything is even.

Spray a regular sized bread pan with some non-stick cooking oil and pour the mixture in and use a spoon to flatten the top so everything is even, then bake in the oven for a total of about 25-17 minutes, then insert a toothpick to see it comes out clean. If so, turn off the heat, allow it to cool down for a bit and cut and serve.
