Zucchini Chia Seed and Chocolate Chip Bread

Wow, I haven’t bought zucchini in ages, and even now, my partner still has trouble with the concept that zucchini can be used for desserts or sweet stuff. Haha, it is a bit hard to get used to, putting vegetables in bread.

But, the crazy things I’ve learned is that putting zucchini in bread only makes it taste awesome and not like vegetables. If you shred them well, you can barley see them bread, except for tiny specs of little green colours that make it look pretty!

Please use a small zucchini if possible, if you can’t find them, just cut a bit off the medium or large. Small ones are usually much thinner. I think it works out the best using a grater for this kind of job as it does it so finely!

Please also know that this bread isn’t overly sweet, but sweet enough to really taste great to me. I don’t think it needs more sugar than what I added, but if you really require more, think of perhaps adding a frosting of some kind or a glaze of maple syrup.

Zucchini Chia Seed and Chocolate Chip Bread

1 small zucchini, grated
1 cup spelt flour
1/4 cup oat flour
3 tablespoons coconut sugar
2 tablespoons white grape juice
2 tablespoons old fashioned oats
2 tablespoons chia seeds
2 tablespoons golden raisins
2 tablespoons unsweetened applesauce
2 tablespoons canola oil
1 tablespoon refined coconut oil
1 tablespoon mini vegan chocolate chips (eg Enjoy Life)
1 tablespoon arrowroot
2 teaspoons baking powder
1 teaspoon pure vanilla extract
1 teaspoon pure maple syrup
1/4 teaspoon baking soda
1/4 teaspoon ground vanilla powder

Topping
1 tablespoon old fashioned oats

Preheat oven to 350°F (176°C).

Use a grater to finely shred the zucchini into very tiny little pieces. The setting should be one of the smallest. Throw away any large chunk or skin.

In a large bowl, combine all the ingredients together, then add the grated zucchini in as well.

Stir until everything is very well and evenly mixed. Be sure that the chia seeds are all separated because sometimes, they can all clump together.

Spray some non-stick cooking oil on a 8×4 inch bread pan and spoon the mixture inside. Move it back and forth quickly to make sure the top becomes even and flat (or use a spoon to do that).

Give the top a spray of cooking oil, and sprinkle across the tablespoon of old fashioned oats. Give it another spray of cooking oil.

Bake in the oven for about 28-30 minutes, then insert a toothpick in the center. If it comes out clean, then it’s ready. Leave it to cool for a bit before serving.
