Rich Nutty Chocolates with Superfood Blend

Mmmm, MORE CHOCOLATE! Ever since I tried using cacao butter the other day, I’ve been crazy with homemade chocolates, and the fact that they can be much much healthier than store bought, but taste just as good! This is another go at making something like that.

Note: The avocado adds bulk so you will feel as if you’re eating more, but it does adds somewhat of a different taste and may not be for everyone, so only add if you’re really wanting more out of it and don’t mind a bit of an avocado taste in the chocolates. Don’t add the tablespoon of pure maple syrup if you’re not adding the avocado.

I love filling the chocolates with delicious super foods like chia seeds, goji berry powder and blueberry and acai powder. Added together, it is hard to taste individual powders, it really just taste like chocolates, haha!

Though I would totally advise you not to eat the entire block at a time, as I would think eating that much (especially if you’re eating it alone) would be unhealthy, but if you split it into a few days, share it with someone, it’s totally awesome!

Rich Nutty Chocolates with Superfood Blend

1/4 cup roasted pecans
1/4 cup roasted hazelnuts
1/4 cup roasted almonds
2 tablespoon chia seeds
1 tablespoon cacao nibs
7 pitted dates
1 small avocado (optional, adds bulk)
1 tablespoon pure maple syrup (only add if you’re adding avocado)
1 tablespoon dark cocoa powder
1 tablespoon finely shredded coconut
1 teaspoon ground vanilla powder
1/4 cup cacao butter
3 tablespoons cacao powder
2 tablespoons better than rice milk powder
1 tablespoon vegan dark chocolate chips
1 tablespoon virgin coconut oil
1 tablespoon goji berry powder
1 tablespoon blueberry & acai powder
1 tablespoon pure vanilla extract
1 tablespoon pure maple syrup
1 teaspoon ground vanilla powder
1/4 cup cashews
1 tablespoon chia seeds
A few sprinkles cacao powder

Add the pecans, almonds, hazelnuts, chia seeds, cacao nibs and dates in a high speed blender.

Blend on full speed until everything becomes a very thick paste. If you’re using an avocado, add the avocado now and the pure maple syrup. Otherwise, just add the dark cocoa powder, shredded coconut and ground vanilla powder. Blend on full speed until everything is smooth.

In a small saucepan, add the cacao butter, cacao powder, rice milk powder, vegan dark chocolate chips, virgin coconut oil, goji berry powder, blueberry and acai powder, pure vanilla extract, pure maple syrup and ground vanilla powder.

Turn the heat on medium high (5) and simmer for 5 minutes until all the cacao butter has melted. Keep stirring until the mixture looks like chocolate syrup.

Drizzle this mixture in the blender where the nuts and avocado mash is and blend again until everything is evenly blended.

Spoon everything in a bowl and add the cashews and chia seeds, give them a few stirs with a spoon until the cashew and chia seeds have blended in the chocolate.

Cover a layer of parchment paper on a 8×4 inch bread pan and spread the chocolate mixture on top.

Even and flatten the surface with a spoon, then sprinkle a little cacao powder on the top. Put it in the freezer for about an hour until it reaches the hardness you desire.
